A Taste of Essex Street Market: Peasant Stock

A historic culinary destination on the Lower East Side, Essex Street Market is home to more than 20 independent merchants. Over the next few months, we will feature the characters that make up the bustling corner of Delancey and Essex Street.

Peasant Stock is a family-owned business that serves freshly-made soups. Patrons can often find owner Christine Juritsch and daughter Emma brewing on-site with homemade stock and quality ingredients. We spoke with Christine about her first three months at the market.

Why did you start Peasant Stock in Essex Street Market?

I first started coming to the market to seek out a cheese I read about in a magazine. The store turned out to be Saxelby Cheesemongers. I started coming to the market regularly and I was impressed by the quality and dedication of the vendors. I was also inspired by the number of female entrepreneurs.

What is your favorite memory at the market? 

The first time I brought my daughter, Emma, who now works with me at the market. We cobbled together a very memorable meal: pear cake from Boubouki, a taco from Brooklyn Taco, and coffee from Porto Rico.

What is Peasant Stock's specialty?

I specialize in soups, made on-site, from homemade stock and quality ingredients. I also offer an array of homemade side orders such as my (almost) famous Maple Bacon cornbread and spicy brioche croutons.

What is your favorite time of the week at the market and why?

My favorite time of day is right before I open, when all my products are ready to serve. I feel as though I've just gotten done preparing for a dinner party each day. It's very satisfying when customers leave happy!

Do you source any products from within the market?

Yes, the bread and bagels for our croutons come from Pain D'Avignon and Davidovich. Grocery items and some produce come from Essex Farm, and meats are from Heritage (just to name a few).

Do you have any “fun facts” about your business?

1. My service counter was-made by my mother's 84-year-old boyfriend.

2. My "secret" soup ingredient is wine.

3. I hate measuring ingredients!
